Yummy

What requires 4 people, 5 lbs of potatoes, 9 roasted chickens, 12 pounds of pork, 4 big pots and lots of canned stuff?? Why, our annual Brunswick Stew making!

This is the second year my sister and I bulk-cooked our Brunswick Stew. Thanks to Alex and his girlfriend, Lindsey, it took us half the time. Mandy, Alex and Lindsey cut potatoes, onions, pulled chicken and chopped pork while I quadrupled the sauce recipe. Next time, I really need to write the measurements out because I'm fairly certain I messed up somewhere. :-) Let's just say the quadrupled sauce should have been 17 cups which would make 4 cups and a little per pot and I wound up with about 6 cups and a little per pot. Mathematician, I am not.

I sent Lindsey home with 2 quarts, have 2 set aside for my dad and step-mom and then froze the rest. Mandy took home a big old pot full and we also ate a smaller pot full. It turned out sooooo yummy and, while it's a compliment that the boys in my house love it, it's frustrating that it disappears so quickly! Nothing like stew in the fall/winter! And of course, what is Brunswick Stew fest, without pictures? :-)




If anyone has a favorite freezable meal to share, please do! I wish I was a "once a month" cooking kind of girl, but I'm not that organized or disciplined. Sure would be nice though! :-)

Oh so cute! What a great idea.... I'm not a "out of the box" kind of girl, but I think I might actually do this!

I just spent the last two days in my kitchen doing Once a month cooking. I do it in the fall/winter seasons only because with homeschooling ... I need to find some time somewhere in the day for me and I find carving out the dinner planning/shopping/preparing/cleaning up part of each day is a great way to reclaim a few hours. It is exhausting but once it is done ... it is like having someone else make your family dinner for the rest of the month. I'm sure I have some recipes to share. What kind of food do you like best?

Now my mouth is watering for a big bowl of Bruswick stew on this cold, dreary Fall Saturday. Will you please share your recipe? I think your bulk recipe might just cover one or two meals in our house!

Okay, I just watched Andrew's cupcake video and it was hilarious!!! I love that he asked for another cupcake at the end of the video and ya'll bought lost it!
